Wumpa Fruit Pie

You're going to want to travel to Wumpa Island to get the wumpa fruit. Ask for directions at Cortex Castle, there'll be a guy with a worryingly large head waiting. You're going to want to get around 3 but carry more if you can because they taste delicious by themselves.

For the shortbread crust, you'll need:

230g butter

2 cups plain flour

1/2 cup of sugar

For the filling, you'll need:

2 cups of wumpa fruit pulp (mango will do if a trip to Wumpa Island is too pricey)

230 grams of cream cheese

115 ml of hot water and 1 packet of gelatin

For the crust to cream together the butter and sugar and add in the flour to form a vague dough. Press this into your pie dish or similar baking dish and blind bake for 12-15 minutes at 180 C/350 F. Allow to cool after baking.

Use a hand mixer to blend together the wumpa pulp and the cream cheese until the consistency is smooth. Some pulp maybe too thick to blend well so a sieve may be required just to get a smoother texture. Bloom the gelatin in the hot water and add that to the pulp mixture while constantly whisking (hand mixer on low/medium) together. Once incorporated, pour into the crust and place in the fridge to set.

P.S. Wumpa fruit isn't real. Don't believe the stuff on the internet. (it's mango with purple food gel)
