Twilight Town's Sea-Salt Ice Cream

This couldn't be any easier. It tastes awesome and would even look the part if you have ice lolly molds (which I don't, but a nice bowl/cup works just as well)

What you'll need:

4 egg yolks

1 tsp vanilla extract

1/2 cup of sugar

pinch of salt

170 ml of evaporated milk

1 cup of heavy cream

blue and green food dye

sea salt flakes to taste

Start this out by whisking the egg yolks, vanilla, salt and sugar in a large bowl. Bring the evaporated milk to a simmer and, while whisking, slowly add to the egg yolk mixture. Back into the pan it goes. Heat the custard mix up on low and whisk this continuously until it reaches the consistency of thick custard. Take this off the heat and allow to cool to room temperature.

While that's cooling down, whisk up half of the heavy cream to soft peaks and fold this into the, now cooled, custard. Once combined, allow to chill in the freezer until frozen.

Once frozen, slice up into more manageable chunks ( this would be skipped if you used a large ice tray) and transfer to a food processor. Add to this the rest of the heavy cream and a few drops of each food colouring and you're going to get this to a nice and smooth consistency. You want to get the colour to a nice turquoise or sea green, then it's ready to go back into the freezer until it's serving time. Add a little cream soda to get a nice sea foam.
