Kronk's Spinach Puffs
Thanks to Feast of Fiction for this recipe, it was very easy to follow and provided tasty results.
For the puff pastry, store bought it fine as long as it is the long sheet that you can cut to size. For the filling you will need;
2 Large Eggs
115 grams of cream cheese
1/2 tsp of freshly chopped dill
1 onion, finely chopped
2 cups of chopped spinach
3/4 cup of crumbled feta (more if you want)
6 slices of crispy bacon
salt and pepper to taste
1 more egg for the egg wash
To start, get those bacon strips crispy. While that's going on whisk together the eggs, cream cheese and dill with 1/2 tbsp of oil. When your bacon is crispy, transfer it over to some kitchen role, towel off the grease and cut into pieces and transfer back into a second bowl.
Add to that second bowl, your spinach, onion and crumbled feta. Give that a good mix then stir in your egg mixture to combine the two. Prepare your oven by pre-heating it to 200 C/400 F and prepare your puff pasty by cutting the sheet into even sized squares (8 should cover the filling amount).
This is easier done when the squares are already on your baking pan. Place a spoon full of the filling in each square, egg wash the bottom and right edges of each square and begin to fold them to form triangles. Leaving one end open, give each of the squares a final egg wash on top before placing them in the oven for 20 minutes.
